What to Eat on Purim

Part of the celebration of Purim includes eating Hamantashen, more correctly termed Oznei Haman or "Haman's Ears". So we decided to make some today!

Directions:

Dough:

Cream together 1 c. sugar and 2 c. butter. Beat in 2 tsp. of vanilla and 1/8 tsp. of salt. Add 3 eggs one at a time and gradually blend in 6 c. of all-purpose flour.

Chill until firm enough to roll and handle, (the recipe said 2 hours, but I only did it for 1 hour and it worked just fine.)

Filling:

Cream together 1/2 c. butter, 1 egg yolk, 1/2 c. sugar, 1 tsp. vanilla, 1/4 c. cocoa powder and 1/2 c. finely chopped pecans or coconut flakes (optional).

Roll out the dough to 1/4" thick. Cut rounds with a 3-4" cookie cutter. Place a teaspoon of the filling in the middle. Gather the edges of the dough around the filling and pinch at 3 points to secure seams firmly. Place on ungreased cookie sheet.


Bake at 375 for 15-18 minutes

Cool on wire racks.
